These small medallions are cut from the whole beef tenderloin. These palm-sized steaks are among the most tender and coveted cuts of beef. Unless you’re excellent at sharing, one lean steak is considered to be an individual portion. Treat yourself!
Cooking Instructions: Here are two things you don’t want to mess up: do not overcook or under season with salt. Sear medallions in a cast iron skillet for two minutes on either side, then place in a 300 degree oven for 6 to 8 minutes. They’re best served mid-rare.
