Description: These are small medallions cut from the whole beef tenderloin, which is dry aged for 28 days. These palm-sized steaks are one of the most tender and coveted cuts on the animal. Lean and best served mid-rare. Unless you’re excellent at sharing, one steak is considered to be an individual portion. Treat yourself!

Cook Instructions: Season well with salt. Sear in a cast iron skillet for two minutes on either side, put in oven for 6-8 minutes at 300 degrees. Do not overcook.
