Description: This is the whole tenderloin of the animal. Lean and tender. Perfect for special occasions. We tie these up with butcher’s twine for an excellent presentation.

Cook Instructions: Sear first. Slow roast in a low oven (approximately 225 degrees) for 2-3 hours. Finish under broil if desired. Salt well, and don’t overcook.
