How to Make Pork Rib Tips
Sometimes you see something in the vending machines and don't purchase it because you're not really sure what to do with them. We've all been there. Take pork rib tips. It's actually quite a bit like making ribs and the result is meaty and just the right kind of chewy. Ingredients:
pork rib tips (more than you think; you're going to want to eat a lot of these)
apple cider vinegar
water
kosher salt
black pepper
brown sugar
chipotle powder
onion
ketchup
orange
Method:
Rub rib tips with a little apple cider vinegar and a spice mix of kosher salt, black pepper, brown sugar, and chipotle powder. How much you use will vary based on how many pounds of rib tips you're making. Leave in fridge overnight.
The next day, heat the oven to 250F.
Place rubbed rib tips on a sheet pan and cover with foil, let cook for 2.5 hrs, turning them over a couple of times.
After 1.5 hours, add 1/2 cup of water to pan.
Make BBQ sauce during this time:
Fine chop 1/2 an onion and saute in olive oil in a heavy bottom pan.
Add 1 cup apple cider vinegar, 1 cup ketchup, juice of 1 orange, black pepper, chipotle powder to taste and let simmer.
Take rib tips out after 2.5 hrs and brush on all sides with BBQ sauce.
Return rib tips to oven with no foil and turn it up to 350F.
Brush with BBQ sauce and turn every 15 minutes for 1 hr.
Check for doneness -- rib tips should come apart easily.
When done, finish on smoking hot grill or crank oven up to 500 for a few minutes on either side.
Serve with extra BBQ sauce. And a lot of napkins.
