What's For Dinner? Lamb Roundbone Chops

You know you're in a cooking rut when it's time to decide what's for dinner and you just can't come up with any ideas. So you make what you know. There's nothing wrong with that. But busting out of a boring routine is never a bad idea.

Step Two: Enjoy something tasty, and, if you're cooking for other people, enjoy watching them try something new.

So: What's for dinner? If you've never made them, we highly suggest lamb round bone chops. Lamb round bone chops are cut from the shoulder. We love them because they look like a cartoon drawing of a piece of meat. Also, they're classic, versatile, and deserve more attention. They're great on the grill. You can simply season them. Or you can marinate them; lamb always pairs well with rosemary. They're fattier than loin or rib chops, which means they're extra flavorful and juicy. It also means they're especially good with a little extra char on them.

Some people have concerns about grill grease fires with fatty meat. If you use indirect heat, flare ups should not be an issue. It's easy to control the temperature beneath the meat on a gas grill. Or, if you're using charcoal, you'll want your coals on one side of the grill. Sear your chops over direct heat, then cook them off to the side.

They may just become your new go-to chop.
