Best cooking method:

This inexpensive and relatively lean steak has full flavor and can be used in a variety of ways. It has a line of sinew that splits the steak into two regions. Both can be treated the same and cooked the same way. It does not need to be marinated, salt and pepper do it best. Sear each side then put it in the oven to finish slowly.


If you’re grilling a flat iron, be careful, especially on an open campfire. It’s very lean and you do not want to grill this to well-done.
