Best cooking method:
The hardest work in cooking heart is the portioning and cleaning, but we do that for customers. Read our blog post on cooking heart and/or just toss heart pieces with olive oil, salt, and pepper, and throw them into a very hot pan. Sauté the slices for 2 to 3 minutes per side, depending on the thickness. Since the muscle is so lean, we like to cook it until rare to medium-rare. Plate with something rich and buttery; or give it a dash of good oil.
We don’t typically stock heart in our vending machines, but we have it in our retail freezer. It comes cleaned and sliced in one-pound packs. Custom order if you want it fresh.
The weight range options listed above are based on how much this cut usually weighs. We always recommend about 1/2 lb. of protein per person.
