For exact cooking times follow a recipe, but here are the basics for cooking rack of lamb: Preheat the oven to 450 degrees. Rub the rack with olive oil, salt, and herbs. Roast, then turn and roast more for even cooking. Remove the rack from the oven and let stand. Slice between the ribs and serve.
We sell both whole (8 frenched ribs) and half racks (4 frenched ribs).
