These palm-sized chops are cut from the loin of the lamb. They have a beautiful fat cap and are very flavorful.
Cooking Instructions: These are easy to cook chops. Preheat the oven to 300. Rub the chops with olive oil, salt, and pepper. Sear two minutes on each side in a hot stovetop skillet. Lower the oven to 120, transfer the skillet to the oven, and let sit for 4 to 8 minutes.
