The Butcher’s Guide to Well-Raised Meat by Joshua and Jessica Applestone with Alexandra Zissu details the history of the Applestones’ journey into butchery. It’s the ultimate guide to buying, butchering, and cooking meat you can feel good about eating. It includes discussions of gear, including how to hone and sharpen knives. Recipes run the gamut from basics (how to cook a perfect steak, the best chicken rub) to weekend projects (DIY bacon or bresaola).
